Black radish carpaccio
&
Smoked trout

Ingredients :

For a plate

  • 10 slices of black radish, finely chopped

  • 3/4 small slices of smoked trout

  • Yellow lemon

  • Trout roe

  • Bread nuts or unsalted almonds

  • Chives and Anethe

  • Pepper, Fleur de sel, Olive oil

  • Folk Sauce

Recipe :

  • On a flat plate, distribute the slices of black radish, squeeze 1/4 lemon,

  • Distribute  smoked trout, trout eggs, herbs, lemon zest & pine nuts or almonds,

  • Squeeze another quarter of lemon on the slices of trout, pepper, salt very lightly, sprinkle with a drizzle of olive oil & a few hints of Folk sauce  !
