Grilled Swordfish Loin


Ingredients :

For 4 people

  • 400g Swordfish or Tuna Loin

  • A few arugula leaves

  • 2/3  Shallots

  • 1 to 2  Tablespoons of flour

  • A little frying oil

  • 1 tablespoon of paprika

  • Salt flower

  • Unsalted almonds or hazelnuts

For the Vinaigrette:

  • 1 lime

  • 2 tablespoons of olive oil

  • A few leaves of Parsley / Chives / Dill

  • Salt pepper

  • 1/2 Garlic Clove

Recipe :

  • Peel the shallots, pass them through a mandolin or cut them finely, sprinkle with paprika and flour, fry them for a few seconds in oil,

  • Cut the fish into 4 pieces , salt and pepper lightly,

  • Heat a pan with a drizzle of olive oil and grill the fish on both sides for a few minutes depending on the thickness,

  • Prepare the vinaigrette with the olive oil, lemon and herbs,

  • Crush the almonds or hazelnuts and set aside,

  • On the plate, place the seasoned arugula  dressing on the side,

  • Arrange the fish with the shallots, almonds & Folk sauce!
